Apple Cranberry Crumble
A good old apple crumble brings back so many memories. It’s such a delicious treat! The soft, tart apples balanced out by the sweet and crunchy topping… Perfection!
We have an updated version of this super delicious dessert that doesn’t contain white flour or crazy amounts of fat. And it’s really easy to make! Let’s dig in.
You need:
For the crumble:
- ½ cup coconut flour
- ½ cup honey or palm sugar
- 1 tsp Summer Day Naturals’ Ceylon Cinnamon Powder
- ½ tsp nutmeg
- A pinch salt
- 1/3 cups pure butter (cold, cubed)
- 1/3 cups almond meal
- ½ cup mixed nuts
- 1 tsp Summer Day Naturals’ Vanilla Bean Powder
For the filling:
- 4-5 Granny Smith or other firm, tart apples (peeled, cored and cubed to 1 inch chunks)
- ½ cup dried cranberries
- 3 tbsp. honey or palm sugar
- 1 tsp Summer Day Naturals’ Vanilla Bean Powder
- Zest of 1 lemon (optional)
Instructions:
- Preheat oven to 375 F. Prepare 6-8 individual ramekins, or butter a 9-inch baking dish.
- Place all the crumble ingredients in a bowl and mix until it becomes crumbly (you can use a food processor for this step) Set aside.
- For the filling, mix all the ingredients and divide them equally into the ramekins. Spread the crumble evenly over the apples.*
- Bake for 20-25 minutes (or 30-40 minutes for a large baking dish) until bubbly and the crumble is golden brown.** Cool for around 30 minutes before serving.
* If you want to make it look more attractive, you can bake the crumble separately on a tray and just crack them to pieces after it has cooled (that’s what we did). You can also bake and keep the crumble as an energy bar.
** The crumble will melt and become quite flat, but don’t worry, it tastes really good.
